Vegan Potato Carrot Mac N Cheese

I read somewhere that cheese is as addictive as cocaine. I also read everywhere that it is not good for you. Tell that to most American kids. Then try to take away their "cocaine" in that little blue box with the yellow pasta of death for a healthy swap and you will quickly learn why obesity is a problem around here. That's why I recommend serving this Healthy Vegan Potato Carrot Mac n Cheese without ever saying WORD about it coming from vegetables to see if your kids like it as much as mine do. We decided to try this all natural and organic Coconut Oil with Buttery Flavor from Nutiva. As you can see, it has been a hit and since coconut oil tends to be a healthier alternative to other oils and vegan butters and spreads, we use this. You can certainly use other vegan buttery spreads but this is our favorite!

Vegan Potato Carrot Mac N Cheese

This delicious vegan mac and cheese is made with potatoes, onions, and carrots and is rich and creamy.


1 large or 1 1/2 cup potato peeled (only if it has the thicker skin otherwise I leave the skin on) and cut into chunks
1 cup carrot cut into chunks
1/4 white or yellow onion cut into chunks
2 cups water
1/3 cup Nutiva butter flavored coconut oil (or vegan butter of choice)
1/2 teaspoon turmeric
1 teaspoon salt
optional 1-2 Tbsp white miso
optional black pepper to taste
1 package of your favorite macaroni


Boil 2 cups water. Put your cut up potatoes, carrots, and onion in boiling water. Return to boil. Turn down heat, cover, and simmer for 20 minutes or until all is soft.

Cook your pasta while the veggies are simmering.

Pour mixture into blender including water.

Add all other ingredients and blend until creamy.

Pour over cooked pasta and serve.
