The Ultimate Vegan Burrito


I am have nearly lived half of my life, here, in Southern California, and if you know anything about Southern Californians, you know we love our burritos. As a mostly vegan, I have learned to make some killer burritos for my family without using any meat. I think I'm pretty close to being all organic, and BPA-free too! 



I have been buying these amazing organic flour tortillas in Costco. We freeze the ones we don't use and let them thaw a little bit before slicing them off with a hard spatula when we need them. 


We used Near East Spanish Rice Pilaf and Romaine lettuce, Heirloom tomatoes, and avocados from Farm Fresh to You, a little organic salsa and Amy's Organic Vegetarian Refried Beans (BPA Free) In this beautiful bean, rice, vegetable medley burrito is a generous dose of vegan Tofutti Sour Cream.


Ok, I realize I cut really big chunks of the heirloom tomatoes, but I just like to enjoy them in their whole delicious form. Plus, they tend to get a little mushy and not be as crisp and a standard grocery store tomato.


Here's what is in this baby:
Flour tortilla heated/cooked
Near East Spanish Rice Pilaf
Eden Organic Vegetarian Refried Beans
Tofutti Sour Cream
Jar Salsa
Heirloom tomatoes cubed
Romaine lettuce chopped
Avocado cubed
Hot sauce to taste

Then you simply add layers as shown and enjoy!

  2. Looks great! Uncooked tortillas are so much better than cooked. It's hard to eat the precooked tortillas after cooking your own!
